Lamb burgers w/mint & parsley
If you enjoy the flavor of lamb, but you've never had a lamb burger before, this recipe is for you...
Ingredients:

2 lbs of ground lamb

4 T of finely chopped mint

4 T of finely chopped parsley

1 T extra virgin olive oil

1 small-medium red onion, finely diced

2 cloves of garlic, minced

1 1/2 tsp ground cumin

1 tsp of ground coriander

1 tsp of sea salt

1/2 tsp of ground black pepper
Directions:

Heat a saute pan for a moment or two, then add a little cold extra virgin olive oil, and add the chopped onion and cook until lightly browned.

Then add the garlic and saute for ~ 1 minute...until fragrant.

Then add the spices - cumin and coriander - again just until fragrant.

Then add the onion and spice mixture to a large bowl.

Chop the mint, and parsley (FYI - I've noted 4 T but this is a rough gauge - I'm a huge fan so I add lots!). Then add the chopped herbs to your large bowl.

Add the ground lamb and mix to combine.

Use your hands to shape the burgers...this is a great job to give a child who is keen to help in the kitchen, provided they've got thoroughly washed hands of course!

Then you're ready to fire them on your grill.
I like to serve this in Spring with my magic mint sauce, asparagus, new potatoes, and a big salad.
