GFCF, nut-free & tasty bread

Ingredients:

4 large eggs

1/2 cup olive oil

2 T honey

1/4 cup ground flaxseeds - soaked in 1/2 cup of water for 10 minutes

3/4 cup coconut flour

1 tsp baking soda

1/2 tsp sea salt
Directions:

Pre-heat oven to 350 degrees F, and grease a 7 x 3 “ loaf pan with coconut oil

Place the ground flaxseeds in water while you prep all the other ingredients

Using a food processor, pulse the coconut flour, baking soda, and salt together.

Then, add the eggs, olive oil, and honey - pulse until combined.

Then, add in the gelatinous flaxseed/water mixture (you’ll notice the water has been mostly absorbed).

Pour the batter into the prepared loaf pan and bake for 35 - 45 minutes.

You’ll know it’s done when a knife comes out clean from the center of the loaf.

Let the bread cool in the pan for 1-2 hours, then enjoy!
