Sardine salad with lemon
This is one of those 'just throw it together' salads which isn't really worthy of a recipe at all but I'm sharing it nonetheless, as inspiration more than anything else...
Serves 1-2 people (depending on hunger levels)
Ingredients:

2 T of your favorite extra virgin olive oil

1 T lemon (preferably Meyer) zest

Juice of the same lemon

1 tsp Dijon mustard

salt & pepper to taste

1/2 a ~4 oz can of sardines (packed in olive oil, drained

leafy greens of choice (FYI - spinach / arugula are probably the best suited)

2 stalks of celery, roughly diced
-
4-5 red radishes, cut into half moons

1/2 bunch of flat leafed parsley, washed, roughly dried & chopped
Directions:

Make the dressing by whisking the first 5 ingredients listed together, then set it aside.

Assemble/prep the other ingredients

Place all ingredients in a large bowl (in which you can toss the salad) and pour the dressing on top and toss to combine.
