My version of chimichurri
Anyone who loves to cook has their own version of Chimichurri...it's hard to beat - it can literally transform an otherwise bland dish into something amazing...
Embracing phytonutrient-rich (i.e., lots of plant based nutrients) dressing/sauce options is a wonderful way to make your meals more interesting, while simultaneously setting the stage for health and wellness.
Ingredients:

1/2 large bunch of parsley, washed & roughly dried

1/4 bunch of cilantro, washed & roughly dried

1/2 small garlic cloves

1/2 tsp red pepper flakes

1/2 tsp ground cumin

1/4 cup of your favorite olive oil

1 T red wine vinegar
-
salt & pepper to taste
Directions:

Blend it all together & enjoy!
Note, this is a very forgiving recipe...i.e., you can put in more of anything you want, just add the salt/garlic in tiny increments as you can't take them out once you've added them!
